Nose: Aromatic, floral. Heather, fruit salad, creamy texture. Smoked almonds, stemmy hay.

Palate: Rich, honey, stone fruits, chestnuts, walnuts, almonds. Berries.

Finish: Smoky, good length, delicate peppery spice.

DALWHINNIE 15 Y.O.

Nose: Clean and fresh, with heather honey, pears, a touch of toffee and a soft floral note.

Palate: Bright and fruity, but also rich, with notes of steamed syrup pudding and sponge cake, with a little cinnamon and nutmeg.

Finish: Just enough spice to match the fruit. Lovely balance.

DALWHINNIE 30 YO

Nose: Fairly spicy, with root ginger, clover honey, a slight mineral hint and subtle smoky, ashy notes, a touch of Lotus biscuits and a buttery caramel undertone. With water, it’s much more creamy, with sweet malt, condensed milk, vanilla cheesecake and prominent floral honey this time, and a very subtle grassy note.

Palate: A huge hit of spice straight off, with peppery oak, a continued flinty mineral note, set honey and just a hint of tinned pear. With water, it’s all cream soda, fresh hay and just a hint of sea salt, with the spice more tempered this time, and dried apple.

Finish: A mineral finish, with white pepper, dried apricot, waxy vanilla and a gentle lingering smoke…

Dom Perignon Vintage 2010

ON THE NOSE
The luminous sweetness of tropical fruit – green mango, melon, pineapple – instantly shines. It then cedes to more temperate notes, the tingle of orange zest, the mist of a mandarin orange. The wine breathes, revealing its freshness. The bloom after the rain. A tactile sensation of peony, jasmine and lilac.

ON THE PALATE
The wine immediately imposes its ample presence, full and massive. A sappy sensation dominates as the tactile is rapidly overtaken by the aromatic. The body unfolds: generous, firm and controlled. Then it contracts, letting the wine vibrate with spices and pepper. The energy is sustained to a scintillating, saline finish.

ON THE NOSE
The opening bouquet is complex and luminous, a mingling of white flowers, citrus and stone fruit. The overall effect is enhanced by the freshness of aniseed and crushed mint. The final aromas offered by the wine are starting to show spicy, woody and roasted notes.

ON THE PALATE
After a long period of reluctance, the wine is finally opening up. There is complete balance between the nose and the palate. Its slender, minimalist, pure, toned, athletic character is now also expressed with warmth. The fruit is pronounced and clear. The vintage’s characteristic acidity is remarkably well integrated. Its persistence is mainly aromatic, grey, smoky and highly promising.

ON THE PALATE
The presence of the wine on the palate is immediately captivating. Paradoxically concentrated yet creamy, it is energetic and warm in the mouth, focusing on the fruit, then gradually taking on more profound bass notes. The whole holds its note perfectly, intensively, with just a subtle, elegant hint of underlying bitterness.

ON THE NOSE
The first hints of fresh almond and harvest aromas immediately open up into preserved lemon and dried fruits, the whole rounded off by darker smoky and toasted qualities.
